This may sound like a daft question.....Does the sidb2 process run all the time on the dedupe servers? Or does it stop running when theres no activity?

    Hiatt,

When no dedup based jobs are running to that media agent the process should not be running.  The sidb engine will spin itself up and down as needed based on jobs requiring deduplication.
